|Badass recipes for real men| :: EAT ME, WORLDWIDE ::

Guys, now it`s your turn because finally I have more of a badass thing to post, thanks to our next contributor. He is a good friend of mine and comes from Poland. He surprised me with his creativity and wish to start a completly different thing. So, here it it, Przemek and his....

BADASS RECIPES FOR REAL MEN

(if you meet a lady who likes it - think twice… she might have bigger balls than you do)

Every Badass knows how to take care of himself. Food is the third most important thing Badass does in his life, after having sex and making money. Real Baddas eats MEAT! A lot of meat and he keeps it spicy and bloody. Every three weeks I`ll give you a piece of advice on how to be a Badass cook! Stay calm and keep cooking!

Heart Breaker!

Easy as hell, spicy as hell and just perfect for your cold beer served in a frozen glass.

You will need:
1. 400g of chicken hearts (the more the better!)
2. 1 clove of garlic (use the Polish one, if you need to use Chinese, than take two)
3. Spices: fresh pepper, sea salt, chilli pepper...and some balls!

How to do it?
1. Clean the chicken hearts: cut off fat, endings of veins and open the heart to take out blood. You are a badass, but you don`t want to eat chicken blood boiled in a heart chamber.
2. Marinate the hearts in olive oil with garlic, fresh pepper, sea salt and chilli pepper.
The stronger the better!
3. Leave it in the fridge for 20 minutes.
4. Fry them on the pan until they are crispy.....

Enjoy it with that cold beer I was talking about in the beginning. ;)

Coming soon.....

(Romantic Badass)

Turko (that`s how he wants to be called), loves eating blue beef steaks, altough he lives with a wonderful women who has more of a sophisticated taste. They both love red wine and cheese. Thanks to the mix of his wilderness and her sensibility, their food is exceptional!
Please meet, the first Badass Chef in Republic of Poland - "Smacznego"!

A true survivor!

:: EAT ME, WORLDWIDE :: {Germany} ::

Since I have a lot of friends from all around the world, I`m always thinking of things that would make us closer or somehow connect us even more and that`s how I got the idea about the "Eat me, Worldwide" project. I was baking a cake the other day, when the idea hit me....Everyone cooks everyday, right? So, if they took some photos while doing it and send me the recipes, we`ll soon have a big variety of recipes from all around the world, which is great! :) So, for the beginning I asked my friends to participate, but I`d really love to see some random people sending me their photos + recipes.... let`s make this interesting, fun, easy to read and fun to watch! What do you say, are you in!? ;)

So, let`s go!

The very first recipe came from Germany.
Mara and Moritz are sharing with us a dessert from late summer, called "Mara`s Wild Berry Tiramisu":

Beeren Tiramisu / Berry Tiramisu

Ingredients for 8 people:
  • 250 g Mascarpone
  • 250 g lowfat quark
  • 100 g sugar Zucker
  • 4 Eggs
  • 500 g ladyfingers ("Spoon biskuit")(google it, if you dont know it)
  • 3 Tablespoons coffee licor (or Amaretto or Baileys)
  • 1 cup cold coffee (strong)
  • 500 g fresh Berries (or different fruits – do not use deep frozen fruits!!!)

1.       Seperate the eggs
2.       Take the Egg white and 50g sugar and beat it to beaten egg white ("Egg snow"). Put it aside for now.
3.       Mix the mascarpone and lowfatquark with 50 g sugar (use more mascarpone if you want it even heavier).
4.       Mix egg yolk and coffeelikör under the Mascarpone-Quark-Mass and whisk (quirl) it (if you are a super sweety put more sugar)
5.       Take the beaten egg white ("Egg snow") and fold it (mix it) gently under the Mascarpone-quark mass
6.       Dig the ladyfingers in the coffee and place them on the base of a baking/casserole dish
7.       Apply one layer of the creme mass on the lady finger base (ca. 3 cm thick (depending on the casserole))
8.       Put one more layer of ladyfingers on the creme
9.       Apply the ladyfingers with another thin layer of the mascarpone creme (ca 1 cm thick) and put the fresh berries on top of it
10.   Apply the rest of the Creme on top of the berries.
11.   Decorate the tiramisu with fresh berries, mint or whatever you feel like

You should give your berry tiramisu at least 3 hours of time in the fridge before you head to the party and become the king/queen of the party with your feel-like-summer-desert!

Mara and Moritz are living together in the middle of Germany in a city called Mainz. While he works, she is studying hard, and while she thinks of new great thinks to try in the kitchen, he goes and buys them at ALDI. We generally try to eat healthy, although a great dessert can never be really healthy!

|cuisine| :: BANANA CAKE WITH WALLNUTS ::

I was in sauna a few days ago and a friend had a magazine wit her, so while she was reading, I was just glancing over the pages and I saw this recipe that looked super delicious, so I took a photo of it and this is how I came to this post about banana cake with wallnuts. :)
I actually made three of them in the last week! What can I say, I have friends with good taste that like to try out my cooking masterpieces. :)
Anyhow, Banana cake + Lemon cake = winwin! :)

So, if you want to make a banana cake of your own, you`ll need:
3 ripe bananas (3 zrele banane)
300g spelt flour (300g pirine moke)
125g butter (125g masla, jaz sem uporabila kokosovo)
100g brown sugar (100g rjavega sladkorja)
2 eggs (2 jajci)
100g walnut kernels (100g orehovih jedrc)
1/2 baking powder (1/2 pecilnega praška)
2 tbs sour cream (2 žlici kisle smetane)
cinnamon (cimet), a pinch of salt (ščepec soli), nutmeg (muškatni orešček)

SLO: Model namastite z maslom, ostalo maslo pa zmehčajte. Grobo sesekljajte orehova jedrca in z vilicami pretlačite banane.
Moko presejte v skledo in ji dodajte pecilni prašek, cimet, muškatni orešček in sol.

ENG: Grease the cake model with butter, soften the rest of it (I just "cooked" it, so I got liquid out of it). Mash bananas with a fork, add butter, sour cream & eggs, which you have mixed with sugar. Next step is to sieve the flour into a bowl, add baking poweder, cinnamon, nutmeg and that pinch of salt. Mix the dry ingridients with the rest and on the end add the wallnuts - leave some, for the decoration. Bake 45 minuts at 180 degrees. Sorry, I discovered that my english is not so good when it comes to the cooking expressions, but I think, you`ll still be able to make a damn fine banana cake! ;)

|recipe| :: CAULIFLOWER CALZONE / CVETAČNI CALZONE ::

|ENG|
Through a friend of mine I found out about the "The Iron You" - A healthy living blog with tasty recipes and since then I`m totally hooked on it. I already made the "Cauliflower Crust Calzone", which turned out delicious! (I actually made it twice last week) :)
I never thought that Cauliflower can be so good! Anyhow, if you are a sporty person and you like to eat healthy than I definitely recommend you to visit "The Iron You"... and than, who knows, you might even apply for the Ironman competition. :)
I decided not to write the recipe since you can find the english version here, but I`ll do it in a slovenian way for a change. :)

|SLO|

Servirajte vroče in mogoče ob kakšni dobri solatki.
Sprobajte in mi podajte kakšen feedback.

Pozdravček,
M.

|cuisine| :: PUMPKING GNOCCHI WITH ROSEMARY ::

Oh, I`m so into autumn right now. I`m eating pumpkins every day -  soup, gnocchi, fried, grilled...whatever a man can do out of a pumpkin! Ok, I also love apples (mmm apple pies <3 ), colourful trees, fresh breeze, grapes, chestnuts, even the rain is not bothering me, I kind of enjoy it.
Actually when I think, I must look pretty weird while riding my bicycle and smiling + singing, cuz there is my favorite song playing on my mp3. I don`t care that it`s windy or rainy, I just enjoy it. It`s easier when you decide not to care how your hair will look like when you`ll arrive to work, or that you`ll probably arrive all sweaty (extra t-shirt + deodorant do miracles), oh and your mascara will probably be all over your face cuz your eyes are producing tears from the wind (so don`t put mascara at home, do it at work! p.s. Vanja knows what I`m talking about) and so on .... :)
As you can see this is another food post, so I should stop talking bullshit and tell you about the recipe!
I found it on Bratinov.si, check it out, you`ll be hungry in a second. Beautiful photos and wonderful recipes, but it`s not in English, sorry. :) So, I took one of his recipes and did it with a twist. Basically instead of using sage, I used rosemary + bay leaves and I`m honest when I say, that even the smell while cooking, was delicious, so you know that the final product was superlicious. :)
Thank you Bratinov for sharing the recipes with us! :)

The recipe for "Pumpkin Gnocchi with Rosemary":

1/2 hokaido pumpkin
1 egg
flour
rosemary
bay leaves
salt/pepper/garlic (dry)
ricotta (it`s in the original recipe, but I didn`t use it)

I used half of the pumpkin for two people, could be for three.

First you cut the pumpkin into pieces, than put it into a boiling water and leave it until it`s cooked. Take it out and mash it.
Add the egg + flour (trust your gut with how much of it) and knead the dough. Then you make a long snake out of it and cut little pretty gnocchi out of it. Cook them in a boiling water and take them out when they come to surface, because that means they`re done.

The next step is frying them a bit in a pan. I used coconut butter (1 cube of it) and first I just used rosemary + bay leaves, so that the aroma was good and than added gnocchi for a minute on each side.

That`s it, they`re ready to be served.

** btw, I just finished with baking around 100 muffins. lol. Why? Well, you`ll have to check my FB page if you wan`t an answer for that one.**

love,
M.

|cuisine| :: SPICY ROASTED CHICKPEAS :: snack snack ::

I`m sure you like snacks, right? Especially if they are as much healthy as possible and in that case, homemade snacks are the right choice. I saw this recipe somewhere online, but honestly I can`t remember on which page, since it was quite a while ago. Today I finally decided that I`ll try it out, because I had some extra chickpeas cans and I have enough of hummus for a while. :)
It turned out super crunchy & delicious!

You`ll need:
  • 1 or 2 chickpeas cans (depends on how much you want to make)
  • 2 tbs olive oil
  • 1 tbs chilli powder (or as much as you like)
  • 1 tbs red pepper powder
  • 1/2 tbs salt
  • 1 tbs garlic+pepper (dry spice)

How to do it:
So, it`s easy...mix chickpeas with everything above and put it into an oven for 30 min. Use baking sheets, spread the chickpeas on it and don`t forget to mix it once in a while.Take it out and eat it hot or leave it cold. It`s your choice.

What to listen while preparing it:
Check out this song, I`m loving it. :)

Bon appetit! ;)

| cuisine | :: PUMPKIN SOUP ::

Outside it`s 40 degrees and I`m sick. Well, actually I got sick because of the weather, at least that`s what the doctor said. Anyway, I couldn`t keep any food inside me for two days now and today I got this weird craving for a pumpkin soup. Lucky as I am, I had some home grown pumpkins that were waiting to be used, so I made my all time favourite - pumpkin soup! #yum

Here is what you need and how you need to do it:
  • 1/2 hokkaido pumpkin
  • 1/2 green hokkaido pumpkin (the small one on the photo above, but I`m not really sure it`s hokkaido as well - sorry for that) :)
  • carrot ( 2x )
  • potato ( 1x )
  • 2 cloves of garlic
  • rosemary
  • cilantro
  • and for the end: a bit of a pumpkin oil + pistachio

You put a little bit of olive oil in the pan, then add garlic and carrots and mix it for a minute or two. Next step is to add the potato + everything else, including the herbs & mix it for another minute.
Add water, I think I used about a liter of it, but you`ll see how it will be, depends if you like it rare or thick.
Than leave it until it`s well cooked, mix it so it get`s creamy, put some pumpkin oil and pistachio on the top and voila... Bon Appétit. ;)
That`s my all time favourite pumpkin soup, that always makes me happy. :)

xo,
Maja

|cuisine| :: QUINOA CAKES ::

Lately, I`ve been struggling with what to eat for my brunch/lunch at work, so I`ve been searching for some good, healthy recipes and I found this one on the DB`s blog and I had to try it out. Thank you DB, for the idea and the recipe! ;)

So, basically I used the original recipe (the ingredients on the photo) + I added some things to make it more personal (avocado, carrots & sesame). I wrote down the english recipe and for the slovenian one, follow this link.
(Since my battery was empty, I took photos with phone, so the quality is not perfect, but it`s still good.)

Quinoa cakes to go. :)

QUINOA CAKES

You`ll need:
- 100 g quinoa
- 50 g mozzarrella (grated)
- 125g baby spinach
- 1 small zucchini
- 2 eggs
- 2 cloves of garlic
- salt, pepper, nutmeg

+ I added half of avocado & grated carrot (1) + some sesame on the top of the cakes.

The whole preparing procedure is really easy. ;) Cook quinoa and than leave it a bit, so it`s not that hot anymore. Meanwhile, cut everything in pieces or grate what`s need to be grated, mix it in a big bowl, add quinoa and than put the mixture into the model for muffins.
Bake it for 20 min at 180 degrees. Take it out and enjoy them hot or cold. ;)

:: RAW VEGAN CAKE |presna veganska torta| ::

Yesterday it was a big day, cuz my lil nephew was celebrating his 3rd b-day! Gosh, they`re growing up so fast...
Anyway, I made him a vegan cake and a damn good one (they said so)! He`s alergic to eggs/milk, so I`m always trying out new recipes to make him happy.  Yup, what can I say, I`m a good Aunty! :) It was the first time I did a cake like this and I was really surprised, because it`s quite easy to make it and it was done quite fast as well. If you have any good recipe for a vegan cake, please share it with me. ;)
First photos were taken with a camera in the morning (cuz the light was great) & the collage was made with my phone, so the quality is not the best, but it doesn`t really matter, since Tim is such a cutie pie, right? ;)

I googled for the recipe and I decided to go with this & this (thank you both for sharing!). I did a mixture of those two and it came out great, I was just missing the touch of something sour in it... maybe strawberries on the top or perhaps cherries? I don`t know, I`ll figure it out untill the next one. Oh, and both of the recipes are written in Slovene and I`m a bit lazy for translating right now, so if you don`t understand it, but really wish to have this recipe, leave me a comment or email and I`ll send it to you. ;)

:: CUISINE :: POTATO MOUSSAKA ::

The other day we decided to try our cooking skills with making/baking/cooking a potato moussaka. We actually used two recipes, cuz we were following the instructions online and the funny thing was, that we cooked together, but we both used a different recipe, which I have to say it came out pretty good in the end. It was delicious! :)
In Slovene you can find the recipe here and here & for the English one, I think this one is just fine.
If you decide to try it on your own and have any questions, you are more than welcome to leave me a comment or write me on my email.

Have a lovely (what`s left of) Sunday!

:: APPLE PIE |recipe| ::

On Monday I was craving for some Apple Pie, so I baked one. I have to be honest and tell you guys, that the pie was more than delicious & the recipe is easy, so of course I`m sharing it with you. ;)

YOU WILL NEED:
For the dough / Testo:
3 eggs / 3 jajca
1 yogurt cup of sugar / 1 jogurtov lonček sladkorja
3/4 yogurt cup of oil / 3/4 jogurtovega lončka olja
2 yogurt cups of  flour / 2 jogurtova lončka moke
1x baking powder / 1 pecilni prašek
1 yogurt cup of milk / 1 jogurtov lonček mleka
little bit of rum / malo ruma

For the filling / Nadev:
10 apples / 10 jabolk
cinnamon / cimet
1x vanilla sugar / 1 vanili sladkor
1/2 yogurt cup of sugar / 1/2 jogurtovega lončka sladkorja
1x sour cream / kisla smetana
powdered sugar to strew / sladkor v prahu za posip

Preparation:
First you have to peel the apples and grate them. You can steam them a bit in their own juice, than add half of the sour cream, cinnamon, rum and vanilla sugar.

For the dough you have to separate egg whites from the yolks. (I hope that makes sense, I never used this words in english before) :D
Whip the egg whites in snow, than add sugar, oil, flour, baking powder, milk, rum and whipped yolks. Than whisk everything to get a smooth mixture.
Pour half of the batter into a greased baking dish and bake it for 10 min at 200 degrees.
Than take it out of the stove, coat it with filling and then pour the other half of the batter on it. Bake it 20-30 minutes at 200 C.
For the end, when the Pie is cold sprinkle some sugar on it and you`re done.

Oh and I almost forgot on the Vanilla sauce -  I used one that I bought in Ikea, but you can also make your own. I found this video, that I think it`s pretty cool.

Priprava:
Jabolka olupimo in naribamo.

Ohlajeno pito posujemo s sladkorjem v prahu.

Oh in skoraj sem pozabila na vanilijevo omako - jaz sem uporabila kar tisto iz Ikeje, lahko pa si naredite domačo in sicer sem našla precej kul video, kjer vam razložijo kako in kaj. ;)

.....that`s all folx. ;)

:: GIRLS NIGHT + RECIPES ::

Since few years now, me & my girls have a tradition of making a "Christmas dinner". The concept is simple -  we have gifts (we draw cards with names), spend some quality time together, eat something & drink mulled wine. Usually we cooked - one meal each girl, but it was too much, so this year we went for the "healthy snacks" and the party was at my place so I was the "big chef". :)
The sauces were a big hit, since all the girls already called me for the recipe. ;)

Omakice so bile pravi hit, ker so me že vse prosile za recepte. ;)

So I`ll share my kitchen secrets with you guys as well. On the first photo there are dates filled with blue cheese. I`m not a big fan of dates because they are really sweet, but with the cheese, the taste is perfect.

1. Dates filled with blue cheese.
1. Dateljni polnjeni s plesnivim sirom.
2. Nothing special, just some Macadamia nuts.
2. Nič posebnega, kupljeni Macadamia oreščki.
3. Carrots (you need a lot of that, cuz people are like bunnies when they start to eat it)
3. Korenje (velike količine, ker ljudje so kot zajčki, ful hitro ga zmanjka) :)
4. Hummus - the recipe that I used is here and it`s the best one from what I tried out (the recipe is in slovene, so please use translator if you don`t understand)
5. White sauce - that`s our very popular (not so secret anymore) sauce , for which you will need: 1 sour cream, 2tbs mayo, 1tbs dion mustard, olive oil, few choped olives and spices (origano, basil, pepper, salt)
5. Bela omaka - to je najina omakica, ki je zelo popularna (in nič več skrivnostna). za katero potrebujete: 1 kislo smetano, 2 žlički majoneze, 1 žličko dion gorčice, olivno olje, nekaj na drobno narezanih oliv in začimbe (origano, bazilika, poper, sol in malce rdeče paprike)
6. Cashews - put them on a hot pan for a minute untill they get some color, than just put some ground red pepper on them. Delicious!
7. Mixed dried fruit  (did not make that) and
7. Mešano suho sadje (kupljeno) in
8. Pretzels ( did not make that either) :)
8. Prestice (tudi niso domače) :)
