GREEK (light) FOOD

Huh so this year I was in Greece and one thing that I loved there was food. They have good food!! :) I bought a cooking book ( I couldn`t resist ) , and I`m using it :) I`m sharing 2 recipes that are super simple and really good (and you dont really need a book for it :D ) .  Probably you`ve all tasted greek salad or tzatziki before, but if you are one of those who never did it, do it now!
 Ive shared this two (most known I think ) dishes because it`s summer here (30-34 degrees), so light food is the best ;) Next time we will talk about spinach pie (burek) & veal in tomato sauce with baked potatoes..mmmm

 GREEK SALAD
 
 SERVES 6
  • 4 firm ripe tomatoes
  • 1 cucumber
  • 1 medium onion
  • 1 green pepper
  • 150 gr feta cheese
  • a few ripe olives
  • a few capers
  • 1/2 cup olive oil 
  • Sprinkling of oregano
  • Salt
Wash the tomatoes, peek the cucumber and cut into slices. Cut the onion and pepper in rings. Place them in a salad bowl, add the olives, capers, oregano and salt, and mix lightly. Slice the feta chees, place it on top of the salad and dress with olive oil.

 TZATZIKI


SERVES 6
  • 2 cups of strained full-fat yoghurt
  • 1 medium cucumber
  • 4 cloves of garlic, mashed to a paste
  • 2 tablespoons olive oil
  • salt
  • Pinch of pepper
  • a little vinegar
  • freshed dillweed, finely chopped
  • a few ripe olives

Grate the peeled cucumber on a coarse grater and press as much liquid as possible out of it. Mix the cucumber with the rest of the ingredients. Garnish with the olives.
